I used to skip recipes that required the zest of a citrus fruit. I simply didn’t know how to do it correctly! The best part is that all citrus fruit are zested the same way.

Materials Parmesan cheese grater
Note: There are special tools you can buy to zest a lemon but few work as well as a simple parmesan cheese grater.
Wash the lemon thoroughly, you will likely be eating the zest so make sure it’s clean before zesting.
Carefully cut off any blemishes on the peel. Do not cut all the way into the fruit, just cut off least amount of rind needed to remove the blemish.
Grate the peel of the lemon using the parmesan cheese grater. Ensure you only grate the coloured part of the peel, not the white. This same method should be used when zesting any citrus fruit, the white portion of the rind is bitter and undesirable.
Tip: Try and use a grater that will collect the zest for you, like the grater/container combo picture above.
